Where is it produced?
Gim is usually grown at farms in the uncontaminated sea of Korea’s southern coast and harvested in the best condition. The collected seaweed is spread out to be dried out in the sun.
The seaweed is usually dried in square shapes and is either a bigger piece for gimbap, as known as seaweed rice rolls, or cut into smaller pieces that one can eat in one bite.
Gim is becoming popular in other regions all over the world for its unique aroma, texture, and shape and is lovingly referred to as ‘black paper’ overseas.
How are Korean gim different from Japanese ones?
Traditionally, only two countries enjoy gim as part of their regular side dish. Normally Korean gim is thinner and glossier than called as Japanese nori.
Many Japan tourists buy Korean gim in large quantities in traditional markets, department stores or major supermarkets of Korea.
Gim is known to have a various content of mineral (Calcium, Iron, Magnesium, Phosphorus, Potassium, Sodium, Zinc), vitamins (Vitamin C, Thiamin, Riboflavin, Niacin, Vitamin B-6, Folate, Vitamin A, Vitamin E, Vitamin K)
and essential amino acids. It is considered a very healthy food.
Types of Gim
Gim is made from thin sheets of dried laver, there are so many types of gim in Korea, but only five main types are here.
Dol-gim is wild laver, grown on the underwater rock and has rough surface filled with holes, both tasty and fragrant.
Jaerae-gim is cultivated laver and harvested from clean waters, unseasoned gim for seaweed rice rolls or gimbap.
Parae-gim is green laver and mixed with another seaweed.
Seasoned-gim is roasted and seasoned with salt and oil. Korean people enjoy seasoned gim with steamed rice as a side dish or beer such as snack.
Gim-bugak is dried laver sheet coated with glutinous rice paste and then fried. It makes an excellent side dish for meals or some eatables.
